  1. It’s of gluten-free / plain flour.
  2. Prepare of maize flour.
  3. You need of vanilla extract.
  4. It’s of & 3/4 tsp baking powder.
  5. Prepare of ground cinnamon.
  6. You need of xanthan gum.
  7. Prepare of salt.
  8. You need of brown rice amazake (160g).
  9. It’s of golden syrup / rice syrup.
  10. You need of olive oil.
  11. Prepare of apples, peeled, cored & diced (220g).
  12. You need of raisins (optional).
  13. It’s of Milk of choice as required, I used rice milk.

Vickys Amazake Apple Cake, GF DF EF SF NF instructions

  1. Preheat the oven to gas 4 / 180C / 350°F and grease & flour a loaf tin.
  2. Mix the flours, baking powder, cinnamon, xanthan gum (if using gluten-free flour) and salt together.
  3. Add in the amazake, syrup, oil, apples and raisins.
  4. Stir into a thick but pourable batter add a few tbsp of rice milk or milk of choice as needed.
  5. Bake for 25 – 35 minutes until golden and the top is springy. You can test in the usual way with a toothpick.
  6. Let cool in the tin for 5 minutes before turning out onto a wire rack.
  7. Cool completely then slice. Serves 8 slices.
  8. Recipe can be doubled, bake for 45 minutes then cover with foil so it doesn't burn on top and bake a further 15 – 20 minutes. Serves 8 large slices to halve.
  9. Amazake is a great discovery I've made! The only ingredients are a grain such as rice or millet, salt and water but it tastes very sweet, almost like pudding. It's generally used to make a hot drink by mixing it with hot water but I've used it here as an egg replacer. It works brilliantly!.
