- It’s 1 and half tsp of baking powder.

- Separate the seeds from dates and in a bubbling boil water soak these dates for half an hour..
- In a blender jar add oil, eggs and sugar and blend it to form a smooth mixture..
- In a separate bowl mix all dry ingredients and gradually add the oil mixture in flour with cut and fold method. Add almond essence if you like..
- Now add dates mixture in a beater and mix well. Make sure the dates become cool down completely and add it along with water. Add roughly crushed walnuts and mix well..
- Now pour the mixture in a mold and bake in a preheated oven on 180° for 35 to 40 mints. Tasty dates walnuts cake is ready to serve..

I had dates as well as walnuts but never got to making a cake with them. This old-fashioned favourite is proof that you don't need to invent new recipes in order to eat healthily. Despite being very low in fat it has a lovely light, moist texture, thanks to the dried dates, and makes a pleasant alternative to a conventional fruited cake. It's delightfully easy to make, and keeps well too. You must add this date and walnut cake to your winter baking list.
