  5. You need 40 g of raisins/sultanas (organic) or seeds/nuts.
  6. It’s 70 g of plain flour.
  7. You need 70 g of wholemeal plain flour.
  8. Prepare 1 1/2 tsp of Baking powder.
  9. Prepare 2 tsp of combination of cinnamon, ground ginger and nutmeg.

  1. Pre-heat the oven to 180°C (fan). In a large bowl, mix oil and sugar using a whisk. Add the egg and mix until well combined – looks creamier..
  2. Add the carrots and raisins (or seeds/nuts, if preferred), combine well..
  3. Add the dry ingredients a third at a time, mixing lightly with a spatula. Try not to knead the mixture!.
  4. Spoon the batter into the baking tin. Place in the oven to bake for 40 minutes. Turn the cake out onto a wire rack..
