Ingredients of Sheer Khorma
- You need of Milk (high fat).
- It’s of Clarified butter (ghee).
- It’s of Dry dates (kharak), cut lengthwise.
- Prepare of Cashews cut in half.
- You need of Almonds thinly sliced.
- Prepare of Pistachios thinly sliced.
- You need of Rasins (kishmish).
- You need of Cardmom power.
- You need of Cardamom seeds.
- You need of table spoons fresh malai.
- Prepare of Thin vermicelli (sewai).
Sheer Khorma instructions
- Dry roast the vermicelli till it is reddish pink and let it cool..
- Fry all the dry fruits (Cashews, Almonds, Pistachios, Raisins) Don't fry dry dates just cut them lengthwise after deseeding them. Save the ghee after frying to be used as this will lend flavour to the dish. Take out the seeds of Cardmom and keep aside. Also keep some cardamom powder ready..
- Boil the milk. Take 5 Tbsp Ghee in a pan and fry the cardamom seeds. Pour this mixture on the hot milk.Add some fresh malai.It adds to the flavour..
- Add dry dates to the milk. Add all the fried dry fruits, making sure that the gas is on low. Cook until gets thick.Add Raisins at the end. Add the vermicelli. Switch off the gas..
- Sugar is to be added last. Tip in the sugar and stir. Add cardamom powder and mix it well..
- Transfer to the serving bowls.Serve hot..
