Ingredients of Almond Wafer Cake!
- It’s 1 cup of flaked coconut.
- Prepare 4 tablespoons of lemon juice.
- You need 2 teaspoons of lemon rind.
- It’s 1 teaspoon of baking powder.
- Prepare 2 drops of vanilla essense.
- It’s 1/2 cup of mixture of condensed milk and milk(can put bit yogurt).
- It’s 1 packet of vanilla (or other flavour) wafers, crushed finely.
- Prepare 2 1/4 tablespoons of self raising flour.
- You need 1/2 cup of caster sugar(bit less.
- Prepare 1/3 cup of melted unsalted butter (bit less).
- It’s 3 cups of ground almonds (no skin).
- It’s 1/4 cup of chopped nuts such as pecans or walnuts.
- Prepare 4 of fake eggs (I use Orgran No Egg, egg replacer).
- You need pinch of nutmeg or cinnamon.
Almond Wafer Cake! instructions
- Crush wafers with good quality food processor or use ziplock bag, mortar stick and smash it..
- Crush almonds using a food processor or just buy almond flour..
- In a large bowl, mix butter and sugar..
- Preheat oven to 160C..
- Beat fake eggs and add to butter sugar bowl.Add in the rest of the ingredients and stir..
- Grease cake pan..
- Bake in oven for 1 hour 10 minutes or until cooked..
- Cool for 30 minutes, remove and enjoy!.
- Note 1: Can add 2 fake eggs and 2 gelatin eggs for better texture (To make 1 gelatin egg, mix 1 tablespoon jelly powder with 1 tablespoon warm water and 2 tablespoons boiling water make sure it's dissolved).
- Note 2: Can add chopped fruit such as chopped pineapple. Add just a few pieces to prevent sogginess..
