Ingredients of Curried Carrot Stew
- Prepare 2 lb of Carrots sliced.
- Prepare 1 of small onion diced.
- It’s 1 of Green pepper diced.
- Prepare 1/4 tbsp of Ginger.
- It’s 1/4 tbsp of Cumin.
- Prepare 1 tbsp of Curry.
- You need 1 of small tomatillo sliced.
- Prepare 1 tbsp of Sugar.
- It’s 1 dash of chili powder.
- It’s 1 dash of nutmeg.
- You need 1 (15 oz) of can tomato sauce.
- It’s 1 cup of diced ham (optional).
- You need 1 1/2 quart of Water.
- It’s 3/4 cup of Lentils.
- You need 1/2 tsp of Salt.
Curried Carrot Stew instructions
- Add to slow cooker carrots, water onion tomatillo and spices lentils and ham (unless vegan) cook on high 4 hours.
- Add tomato sauce after two hours.
- When lentils and carrots are tender.
- About 4 hours stew should be done stir return lid and turn off slow cooker serve with crisp flat bread on the side.
