Ingredients of Coconut Rhubarb Cake
- You need of Cake:.
- You need of AP flour.
- It’s of brown sugar.
- Prepare of nutmeg.
- You need of cinnimon.
- It’s of salt.
- It’s of baking soda.
- It’s of beaten eggs.
- Prepare of yogurt (I used Lactose free unsweetened vanilla).
- You need of chopped rhubarb.
- You need of coconut.
- You need of Topping:.
- Prepare of AP flour.
- You need of sugar.
- Prepare of soft butter.
- You need of cinnimon.
Coconut Rhubarb Cake instructions
- Preheat oven 350°.
- Mix dry ingredients, add eggs and yogurt and partially mix.
- Fold in rhubarb and coconut. Do not over mix..
- Pour into grease 9×13 pan.
- In same bowl add all topping ingredients and mix with pastry blender until crumbly. Sprinkle evenly over top of cake.
- Bake 45 minutes or until cake tester comes out clean Cool completely before cutting.
