Ingredients of Emma and Charlotte’s ‘special’ gluten free muffins
- It’s 150 ml of coconut milk.
- Prepare 2 of over ripe bananas.
- You need 225 g of gluten free self raising flour.
- It’s of Quarter teaspoon xanthan gum.
- Prepare Tablespoon of baking powder.
- Prepare 150 g of granulated sugar.
- It’s 60 ml of olive oil.
- It’s Teaspoon of vanilla extract.
- You need 100 g of chocolate chips.
- You need 10 of pitted dates chopped.
Emma and Charlotte’s ‘special’ gluten free muffins step by step
- Preheat oven to 200c/gas 6. Line a 12 hole muffin tin with paper liners. Blend bananas and coconut milk until smooth..
- Mix flour, xanthan gum, baking powder and sugar in a bowl..
- Make a well and pour in banana mixture..
- Mix in oil and vanilla essence..
- Stir in chocolate chips and dates. The mixture should be thick like a banana loaf..
- Divide evenly between the paper liners. (Suggested 6 large muffins or 12 small muffins).
- Bake for 15-20 mins..
- Place on a wire rack to cool..
