Ingredients of Healthy Christmas Cake

  1. You need 1 cup of aata/wheat flour.
  2. Prepare 1/2 cup of jaggery.
  3. Prepare 1 tbsp of black raisins.
  4. Prepare 1 tbsp of chopped dry-fruits.
  5. You need 1/2 tsp of vanilla essence.
  6. It’s 1/4 cup of oil.
  7. You need 1/2 tsp of lemon juice.
  8. Prepare 1/2 cup of hot water.
  9. It’s 1 tsp of baking powder.
  10. Prepare 1/2 tsp of baking soda.
  11. You need as needed of Some black raisins and dry-fruits for garnishing.

Healthy Christmas Cake instructions

  1. Take a bowl and add jaggery and hot water to it. Cover it & let it rest for about 5 mins. Mix it well then strain the water..
  2. Now to it add oil. Mix it well. Then keep a strainer over the bowl & add aata, baking powder and baking soda. Strain them. Now mix everything well..
  3. Then add vanilla essence to it. Mix it well. Now add lime juice to it. Mix it too. Then add chopped dry-fruits & black raisins to it & mix everything well..
  4. Now take a kadai for pre-heating with it's base covered with salt and a stand over it. Cover it and pre-heat the kadai for 3 mins on high flame and then 7 to 8 mins. on medium flame..
  5. Then grease a cake tin with some oil & pour the mixture into it. Pat it twice so that any air-bubbles doesn't forms. Now open the lid of the kadai & place the tin over the stand, quickly cover the lid and bake it on a low flame for about 35 to 40 mins. Note : After 15 mins. open the lid once and spread some chopped dry fruits & black raisins over it. Cover it quickly then again bake it as usual..
  6. After 40 mins. check it with a tooth-pick by inserting it into the cake. If it comes out clean, that means your cake is done..
