Ingredients of Christmas Plum Cake
- You need 1 cup of maida.
- It’s 1/4cup of any fruit juice.
- It’s 1/4 tsp of cinnamon powder.
- You need 1/2 tsp of cardamom powder.
- It’s 1 tsp of baking powder.
- It’s 1/2 tsp of baking soda.
- It’s 2 tsp of cornflour.
- You need 2 tbsp of milk powder.
- You need 1/4 tsp of ginger powder.
- You need 1/2 cup of milk.
- You need 1 tsp of vinegar.
- It’s 1/4cup of powdered/castor sugar.
- You need 2 tbsp of tooti-frooti.
- Prepare 2 tbsp of chopped dates.
- You need 2 tbsp of chopped anjeer.
- Prepare 1/4 cup of mixed fruits (dried).
- You need 1/4 cup of mixed dry fruits.
- It’s 1 tbsp of chopped pistachios.
- You need 1 tbsp of black raisins.
- You need 1 tbsp of brown raisins.
- You need 7-8 of cherries.
- Prepare of For caramel syrup :.
- Prepare 1 tbsp of sugar + 5 tbsp water.
- You need 5-6 of kesar strands.
- It’s 1/4cup of melted butter or oil (salted/unsalted).
- It’s 1 tsp of vanilla essence.
- Prepare of For mixed fruits (dried & chopped).
- It’s as required of Prunes.
- It’s as required of Cherries/berries.
- You need 1 of Kiwi.
- You need 1 of Mango.
- You need As required of Papaya.
- Prepare as required of Pineapple.
- You need of For mixed dry fruits (chopped).
- It’s As needed- of Walnut.
- Prepare as needed of Almonds.
- You need as required of Kaaju.
- Prepare as needed of Pista.
Christmas Plum Cake instructions
- In a bowl take the fruit juice & add all the dry fruits & mixed dried fruits. Mix everything well and let it soak it for at least 3 to 4 hours. You can even used "Frooti" as a substitute for fruit juice..
- Now pour milk in a small bowl & add vinegar to it. Mix it and keep it aside. Your buttermilk would be ready in some time..
- Now for caramel syrup, take a pan & add 1 tbsp of sugar & 1 tbsp of water to it. Let it boil on a low flame until it turs golden brown in colour. Now add 4 tbsp of warm water to it & mix it well with the caramel sauce. Boil it once. Your caramel syrup is now ready. Then let it cool down completely..
- Now in the dried mixed fruits & nuts, soaked in orange juice, add 1/4th cup of powdered sugar & mix everything well. Then add caramel syrup into it then again give it a mix..
- Now keep the strainer over it & add maida, baking powder, baking soda, milk powder, cornflour, cinnamon powder, cardomom powder, ginger powder, kesar strands & strain everything. Then give everything a good mix..
- Now slowly and gradually add previously prepared buttermilk to it. Mix everything well with fold and cut method. Then add melted butter to it & mix it well with the batter..
- Finally add vanilla essence to it & give everything a good mix..
- Now for pre-heating, take a kadai for pre-heating with it's base covered with salt and a stand over it. Cover it and pre-heat the kadai for 3 mins on high flame and then 7 to 8 mins. on medium flame..
- Now grease a 6 to 7 inch cake tin and add the batter into it. Dab it twice so that the air bubbles gets off. Now place it over the stand & immediately cover the kadai & bake it on a low flame for about 60 to 65 mins..
- After 1 hour of baking, check it by inserting a toothpick, if it comes out clean then your cake is done. If not you can keep it for 5 to 10 mins more..
