These cakes come out light, moist and full of flavour, and all you need is a handful of ingredients and a few minutes of your time. We’ve put together two of our favourite air fryer fruit cake recipes from the UK, so let’s get frying and baking!
Traditional Fruit Cake
Ingredients:
- 1 cup of mixed dried fruit
- 1/2 cup of sultanas
- 1/2 cup of currants
- 1/2 cup of raisins
- 1/2 cup of candied cherries and cherries
- 3/4 cup of all-purpose flour
- 1/2 cup of sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 2 eggs
- 1/2 cup of melted butter
- 1/4 cup of milk
- 1 teaspoon of vanilla extract
Instructions:
- Preheat the air fryer to 350°F (175°C).
- In a large bowl, mix together the dried fruit, sultanas, currants, raisins, cherries and cherries.
- Add in the flour, sugar, baking powder, cinnamon and nutmeg and mix until combined.
- In a separate bowl, whisk together the eggs, butter, milk, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Grease a round cake pan with butter or oil and pour the mixture into the pan.
- Place the cake pan in the air fryer and cook for 30 minutes.
- Once cooked, allow the cake to cool for 10 minutes before turning out onto a wire rack to cool completely.
