Hi Baekers!

We asked you what your favourite dessert was as a kid and a lot of you were nostalgic about either a home made coconut cake or a pineapple cake from your favourite bakery. So we decided to make this Pineapple & Coconut Bundt cake!

Bakeware alternative:

We’ve used a 12 cup total capacity bundt pan.

Measure the total capacity of your Bundt by filling it up to the rim with cups of water. Say, it’s 6 cups. Simply divide the total capacity of your Bundt with total capacity of the Bundt in the recipe, for eg. 6 / 12 = 0.5. So halve all the quantities in the recipe and bake it easily in a smaller sized bundt pan. Baking time will remain almost the same.

If you don’t have a Bundt pan at all, instead of a 12-cup-capacity Bundt (roughly 10 inches in diameter and three inches deep), you can use:

9-inch round: A single standard eight- or nine-inch round cake pan only holds six cups by volume, meaning that a 12-cup Bundt recipe will require two cake pans.

13×9: A 13×9-inch baking pan holds 14 cups and can easily accommodate a 12-cup Bundt cake recipe.

A Bundt batter baked in a non-Bundt pan will require different baking times. Bundt batter halved and baked in two cake or loaf pans will likely require less time, while Bundt batter baked in 13×9-inch pans may require more time, so stay in the kitchen while the cake bakes and give it plenty of attention to ensure proper doneness.

Ingredients:

(A kitchen scale is a quick and precise way to weigh ingredients and it’s inexpensive too. We use this one and its under 300 INR:

 For the Pineapple Jam:

1. 600 gm pineapple puree
2. 225 gm sugar
3. 3 cloves
4. 2 tsp lemon juice

For the Coconut Cake Batter:

1. 350 gm all-purpose flour, plus more for dusting
2. 1/2 teaspoon salt
3. 2 teaspoons baking powder
4. 230 gm unsalted butter, room temperature
5. 500 gm caster sugar
6. 6 nos. eggs or 24 tbsp buttermilk (added 4 tbsp at a time x 6 times)
7. 1 teaspoon vanilla extract
8. 1 teaspoon coconut extract (optional)
9. 240 ml unsweetened thick coconut milk
10. 50 gm shredded coconut (optional)
11. 30 gm desiccated coconut (optional)

For the Pineapple Glaze:

1. 125 gm powdered sugar
2. 60 ml pineapple juice
