Ingredients:

Cake
3 cups (~375 grams) all-purpose flour
1 package (3.4-oz) (~100 grams) instant coconut cream pudding or vanilla pudding
½ tsp (~3 grams ) salt
¼ tsp (~1.2 grams) baking soda
1½ cups (~340 grams) butter, room temperature (3 sticks)
2¾ cup (~550 grams) sugar
6 large eggs
2 tsp (~8.4 grams) vanilla extract
1 Tbsp (~4.2 grams) coconut extract
1 (8-oz) (~227 grams) container sour cream
1 (4-oz) (~113.5 grams) white chocolate bar, finely chopped

Cream Cheese Frosting
1/2 cup (~113 grams) butter softened
1 (8-oz) (~227 grams) package cream cheese
2 tsp (~8.4 grams) vanilla extract
4 cups (~460 grams) powdered sugar
1 (7-oz) (~200 grams) package shredded coconut, toasted

Instructions:

Cake
1. Preheat oven to 325ºF/160ºC. Butter and flour a 15-cup Bundt pan. Set aside.
2. Sift together the flour, salt, and baking soda. Set aside.
3. Cream together butter, sugar, vanilla, and coconut extract. Beat for 2 to 3 minutes, or until light and pale yellow in color. Add the eggs, one at a time, beating well after each addition, stopping and scraping the sides of the bowl as needed.
4. Add pudding mix to the batter and mix.
5. Reduce the speed of the mixer and add the sifted dry ingredients alternately with the sour cream. Mix until fully combined. Stir in the finely chopped white chocolate by hand.
6. Spoon batter into prepared pan and place in the oven.
7. Bake, placing a piece of aluminum foil on top to prevent over browning, if needed, for 1 hour 30 minutes to 1 hour 40 minutes, or until a toothpick inserted into the center comes back clean.
8. Remove from oven and let cool in pan on a cooling rack for 15 minutes, then remove from the pan and let cool completely.

Cream Cheese Frosting
1. In a large bowl, beat together cream cheese, butter, powdered sugar, and vanilla extract with a hand mixer until light and fluffy.
2. Spread the frosting over the top of the cake. Press toasted coconut into the frosting.
