Delicious Dundee Cake Recipe From The Hairy Bikers

Ingredients

  • 200g softened butter
  • 200g caster sugar
  • 4 large eggs
  • 225g self-raising flour
  • 75g ground almonds
  • 2 teaspoons almond extract
  • 100g sultanas
  • 100g glacé cherries, halved
  • Zest of 1 lemon
  • 25g flaked almonds

Instructions

Preheat your oven to 180°C and grease and line a 20cm round cake tin.

Put the butter, sugar, eggs, flour, ground almonds, almond extract and lemon zest in a bowl. Beat the ingredients together until they are combined. Stir in the sultanas and cherries and mix together.

Spoon the mixture into the prepared tin and spread evenly. Sprinkle the flaked almonds on top. Bake for about 40 minutes until golden and a skewer inserted into the middle comes out clean.

Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
