Instructions:

  1. Preheat your oven to 160°C / 325°F / Gas Mark 3.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well between each addition.
  4. Sieve in the gluten-free flour, mixed spice and baking powder, then fold in the ground almonds.
  5. Add the mixed dried fruit, glacé cherries, orange zest and brandy or orange juice.
  6. Mix everything together until fully combined.
  7. Spoon the mixture into a lined 20cm cake tin and smooth the top with a spatula.
  8. Bake in the preheated oven for around 1 hour and 30 minutes, or until a skewer inserted into the centre of the cake comes out clean.
  9. Allow the cake to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
