My yule log recipe takes a light chocolate sponge and pairs it with a creamy chocolate mascarpone filling, coated in a rich whipped chocolate ganache frosting!
For the finishing touches, my triple chocolate yule log is sprinked with icing sugar, frozen cranberries rolled in sugar, and a few sprigs of rosemary.

INGREDIENTS
Sponge:
6 large eggs, separated
150g (3/4 cup) caster or superfine sugar
50g (1/2 cup) cocoa powder
1 tsp vanilla
Ganache:
200g (7oz) semi-sweet or dark chocolate, chopped
300ml (1 1/4 cups) heavy or double cream
Cream filling:
150g (2/3 cup) mascarpone cheese
150ml (2/3 cup) heavy or double cream
50g (1.5oz) semi-sweet or dark chocolate, chopped
60g (3 tbsp) icing sugar
pinch of salt
