Banana bread has always been an absolute favorite quick bread to whip up. I saw this recipe for the “Kona Inn” bread and knew I had to try it!
2 1/2 cups cake flour (for every cup of flour, remove 1 tbsp of flour and replace with 2 tbsp of cornstarch if you are using all purpose flour)
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups ripe mashed bananas (about 6 bananas)
4 eggs, well beaten
1 cup coarsely chopped walnuts (optional)
Preheat the oven to 350.
Grease and flour 2 8x4x3-inch loaf pans.
In a large bowl, mix together the shortening and sugar. Add mashed bananas. Add in well beaten eggs. Wipe down sides of bowl.
Stir together the flour, salt and baking soda in a bowl. Add the combined dry ingredients and stir only until the batter is thoroughly blended. Fold in the nuts.
Pour into the prepared pans and bake 50-60 minutes, or until a skewer or straw inserted in the center of the loaves comes out clean, or with only a few moist crumbs. Remove from the oven and let cool in the pan for 5 minutes, then turn out on a rack and let cool completely.

Tammy and I have been friends for many years and met here on YouTube! Since then we have met up in real life many times. You will LOVE her tutorials and learn how to decorate cupcakes better than most bakeries do. She lives in Canada, but I really wish she lived next door.
Also check out Jenn of cupcakesandcardio. You will love her as well. tinyurl.com/lahtvfp
She and I have just recently become YT besties, have now met in real life twice and done some video collaborations together. When we are together, we “get” each other. It is hard to explain to people sometimes what you do and it is nice to be comfy knowing that she also understands everything I am talking about. Oddly enough, she too lives in Canada. I may have to move there soon since such awesome ladies are produced there!
Lastly, smile! I like it when you smile 🙂
