Pumpkin Cheesecake No Bake Balls

Ingredients: (Makes 20 Balls!)

2 1/2 cups white chocolate chips or 15 oz. white almond bark
1 1/2 cups crushed up vanilla wafers
1/2 cup pumpkin puree
6 oz. cream cheese, softened
1/4 cup powdered sugar
1 1/2 tsp pumpkin pie spice

Directions:

1. Take 1/2 cup white chocolate and melt it in the microwave in 30 second increments until smooth.
2. Mix crumbs, pumpkin, cream cheese, sugar, and pumpkin pie spice with an electric mixer until combined.
3. Add the melted white chocolate and mix 2-3 more minutes.
(Taste it to see if you need more sugar.)
4. Place mix in the refrigerator for at least 30 minutes. (I also putit in the freezer for 10 more minutes.)
5. Spray your hands with cooking spray and roll the mix into balls. (It is really sticky so you will need to do this a few times.)
6. Place the balls on a parchment lined cookie sheet and freeze for 30 minutes.
7. Melt the rest of the white chocolate in the microwave in 30 second increments, stirring each time, until melted.
8. Remove the balls from the freezer and dip into the melted white chocolate using a fork. (Remove the excess by tapping the fork on the side of the bowl.)
9. It should set fast since they are frozen and then you can fix any mistakes you can see from the fork. Store in the refrigerator! Enjoy!!!
