4 Ingredient pumpkin chocolate chip cookies that are vegan, gluten free and no oil is what I will be sharing with you today. These cookies are a little higher on the calorie density scale but are okay for a treat once in a while like for a holiday party or family gathering. This recipe is so easy, it will soon be one of your favorites. Here is what you will need for this 4 ingredient pumpkin chocolate chip cookies.
Ingredients:
1 15 ounces can pumpkin puree
1 19 to 21 ounce cake mix (I used vanilla)
3 T aqua faba
1 cup vegan chocolate chips ( I like enjoy life brand)
Instructions
Add the first 3 ingredients to a bowl and using a mixer blend well. Next fold in chocolate chips
pre-heat oven to 325 degrees
Using a small ice cream scoop or melon baller scoop out the dough and place on a lined baking sheet. Bake for 10 to 12 minutes. Do not over bake.
You can get up to 3 dozen cookies from this recipe.
