Vegan Silken Tofu Scramble

This is our recipe for Vegan Scrambled Eggs! We use tofu to recreate the perfect egg texture.

We switch this recipe up from the usual tofu scramble. We use two types of tofu for this – silken and firm. The blended silken tofu is the secret to this dish and what gives it that creamy, eggy texture that the firm tofu alone can’t give us.
We also use black salt which is what gives the dish that sulphur flavour. If you don’t have this don’t worry as it’s not essential but does take these vegan eggs to the next level!

Transfer to a plate and set aside. In the same skillet, heat the remaining oil. Add the block of tofu and break the large chunks into smaller pieces with a wooden spoon. In a frying pan, mash the tofu with a fork and begin to sauté over low heat.

In a small frying pan or saucepan, break up the tofu with a spoon or spatula and then add all of the ingredients. Heat it over a medium heat. 300 g silken tofu, 1. Sauté the tofu for about 10 minutes, stirring every few minutes. Pour in your spices and salts and stir around for about 30 seconds. Add the lemon juice and stir more. Stir to combine and fry until warm throughout and crispy on some edges. The tofu should look like gently scrambled eggs. Serve over hot (vegan) buttered toast!
